Zucchini and Leek Fritters with King Prawns

I am obsessed with these zucchini and leek fritters at the moment! I am absolutely loving leeks general right now. They are so versatile and add a a pop of flavour to any meal. These fritters are so easy to make and are perfect for a mid-week dinner when you are not feeling up to cooking anything too complicated. The prawns cook in about 5 minutes too! The dish is really light and healthy too, but leave you feeling satiated. They are completely gluten free. The pea pesto also gives the dish a bit of zesty kick.

  1. 1 zuchini, grated
  2. 1 leek, chopped finely
  3. 2 garlic clove, minced
  4. 1 egg
  5. ½ cup brown rice flour
  6. Salt and pepper
  7. 1 tbsp ghee
Pea Pesto
  1. Peas
  2. 1 tbsp marinated goas fetta
  3. Squeeze of lemon juice
  1. 8 prawns
  2. 1 tbsp garlic and chilli flavoured oil
  1. Remove prawn heads, shell and legs. Then slit the backs of the prawns lengthwise with a sharp knife.
  2. Devein, then place the prawns in a bowl. Drizzle in the flavoured oil and place in the fridge to marinate.
  3. Make the fritters by mixing the leek, garlic, zucchini, egg and brown rice flour. Season with salt and pepper.
  4. Get a non-stick saucepan really hot and add the ghee.
  5. Using 1 heaped tbsp batter at a time, use your hands to flatten the mixture into patties
  6. Fry for 2-3 mins on each side or until golden brown. Continue for all of the mixture then set patties aside.
  7. Make the pesto by putting the peas in boiling water for 2 minutes.
  8. Remove and drain and add to a food processor with some lemon juice and salt and pepper.
  9. Add the mixture and the goats cheese to a bowl and mix in with a spoon.
  10. Preheat BBQ or grill to high, add prawns to the flat plate (or if using the grill place prawns on a flat heat proof tray) and cook for 5 minutes, adding some marinade, until cooked.
  11. Serve by adding 5 patties per plate, a dollop of pesto and topped with the prawns.
