Orange Zest + Oat Cookies

Not only do Flahavans make delicious oats for your brekkie, they can also be used for baking delicious snacks! These cookies are beautiful with a twist of orange and thyme.

Ingredients
  1. 180g Kerrygold unsalted butter
  2. 220g light brown sugar
  3. 75g caster sugar
  4. 1 tsp nutmeg
  5. 2 eggs
  6. 1 tsp vanilla extract
  7. Zest and juice of ½ an orange
  8. 260g plain flour
  9. 1 tsp bicarb of soda
  10. 180g Flahavans rolled oats
  11. Pinch sea salt
  12. Pinch dried thyme, to garnish
Instructions
  1. Preheat the oven to 180 degrees celcius.
  2. Mix the butter and sugars with an electric mixer.
  3. Add in the eggs, nutmeg, vanilla, zest and juice of an orange.
  4. Sift in the flour and bicarb of soda.
  5. Mix in the sea salt and oats.
  6. Place 1 tbsp of the mixture onto a lined baking tray. Repeat with the remaining mixture.
  7. Sprinkle each cookie with some dried thyme.
  8. Bake for 15-20 mins until golden.
